Caramel-Nut Corn


Today’s the day we signed up for After Morning Service Cookie Duty. Last week Sherri, the deacon’s wife, made absolutely delicious brownies, glazed donuts and some kind of cookies that I didn’t try since I took two brownie bars and a donut!

I decided to bring crackers and cheese, M&M peanut butter cookies, and caramel-nut corn. And a couple kinds of juice. The only real projects of those items is the corn. It’s super easy to put together but takes constant stirring while in the oven so that the caramel wont stick to the bottom of the pan.


12 cups unsalted Popcorn

3 cups walnut halves, pecan halves or unbleached whole almonds

1 cup packed brown sugar

1/2 cup stick margarine or butter

1/4 cup light corn syrup

1/2 teaspoon salt

1/2 teaspoon baking soda

You just pop the corn, mix all the other stuff together in a pan on the stove top–when it’s done, drizzle it all over the popcorn which is spread out on two large pans and placed in the oven for an hour at 200.

Deeder loved the popping corn part but couldn’t understand for the life of him why Mommy got to shuffle around the popcorn every few minutes. First off, I was using one of his most adored items to stir (a spatula) something that he loves to eat (popcorn). Second, if “hot” is so dangerous, how come Mommy could touch and he couldn’t?
Anyway, it turned out beautifully and he did get to snack on some when the hour was finally up!

The really good news is that people couldn’t stop eating the popcorn :D
I have about half the cookies left over, which isn’t what I wanted to have happen! They were good, but no where near as tasty as those donuts and brownies last week.

    I can’t believe how grown up Deeder looks. He’s really looking like a little boy now, less a toddler. I’m going to try this recipe this afternoon with the kids. Graeme is out of town this week so it’s great to have new things to share with the kids.
