Daddy the Cookin’ Man

My mom took notation of the German dish “Streudela” that Darren enjoys making, here it is:

German Streudela – Darren’s Recipe

In a large mixing bowl, combine the following ingredients:
4 cups flour
1 teaspoon salt
2 heaping teaspoons baking powder
2 or more eggs
½ cup (approximately) milk, to make a soft, biscuit dough.

Knead the dough until smooth, then roll as thinly as possible on a floured surface.
Filling for streudela:

2 pounds ground beef, sautéed
Garlic salt to taste
1 pound bag sauerkraut, drained
Bacon bits (or 1 pound bacon fried and crumbled)

Rub oil on flattened dough.
Put filling in a line on dough; roll up to encase the filling and seal the edges. Slice that portion off, and continue making rolls of filled dough.

In an oval roaster pan, place the following ingredients to fill the pan half full:

4 to 8 peeled, chunked potatoes
3 large onions, sliced
A little oil
Water to cover potatoes and onions

Lay streudela on top of potatoes and onions mixture. Cook on low, covered, for about one hour.

When it starts to smell burned, it’s done, because that means the water has all evaporated.
This is delicious ‘left-over.’ Heat the streudela up in butter in a frying pan.

Thanks, Mom, for writing out this recipe that Darren describes as a make-it-up-as-you-go-along project. I know he sure enjoys making it and changing the ingredient and process a little here and there. Each time he sets out to make it he reminds me that the very most important part is to never take the lid off until it starts to smell burnt which will signify the proper completion of cook time.

He sets it out with sliced cucumbers in ranch dressing mix per his dad’s common practice.

    If anyone wonders if the streudela is good, it is delicious! I especially like the bacon in it. And – yes – the leftovers are quite good, too.
